Oreo Stuffed Chocolate Chip Cookies

Chris made these last night as dessert for tonight's dinner.  Hope they're good!!



Oreo Stuffed Chocolate Chip Cookies
2 sticks softened butter
3/4 Cup packed light brown sugar
1 Cup granulated sugar
2 large eggs
1 Tablespoon pure vanilla
3 1/2 Cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
10 oz bag chocolate chips
1 bag Oreo Cookies, I used the double stuff
1.  Preheat oven to 350 degrees F.   In a stand or electric mixer cream butter and sugars until well combined.  Add in eggs and vanilla until well combined.
2.  In a separate bowl mix the flour, salt and baking soda.  Slowly add to wet ingredients along with chocolate chips until just combined.  Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie.  Take another scoop of dough and place on bottom of Oreo Cookie.  Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough.  Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until cookies are baked to your liking.  Let cool for 5 minutes before transferring to cooling rack.  Serve with a tall glass of milk, enjoy!
Makes about 2 dozen VERY LARGE Cookies

Emilia's New Bike

Moppy bought Emilia this bike for her birthday.  As you can see, she loves riding it!  I wish they made on for grown ups!




Palm Springs Hotel and Airport

 Beau has now decided that he can crawl more than two moves at a time.  So he's across rooms and pulling up on everything!

Kathleen and Stewart's Wedding

Stewart and Kathleen had a beautiful backyard wedding.  They had some strong winds Thursday night and a couple of palm tree tops ended up in their yard and some flowers were blown over but you couldn't tell by the rehearsal on Friday.  Emilia loved being a flowergirl and wished in the fountain at the Palm Springs airport that she could be a flowergirl every year for her birthday!

Palm Springs Aerial Tramway

This was the best thing to do on Saturday morning before Stewart and Kathleen's wedding!  We made a quick run to Target for some jackets and then took the tram up Mount San Jacinto.  It's one of 3 rotating trams in the world but it's the biggest change in elevation.  The other 2 are in Switzerland and South Africa.  It only takes 10 minutes to get to the top going from 2643 ft to 8516 ft.
